Chewy Fudge Cake


The wind was blowing the snow sideways today and we're trapped at home again. By we of course I mean my fun four yeard old son and myself. We do lots of projects together, and made this 'Old-Fashioned Chewy Fudge Cake' from my Southern Heritage Cakes Cookbook. Yes, one from my favorite series. It turned out well, but nothing like this picture, so I decided it was better to print this instead! The picture may not be for the fudge cake, but mine just looked like flat brownies in a pan. Much better to look at this 4 layer thing served by that happy looking servant, right?
2 cups sugar
1 cup all-purpose flour
1/2 teaspoon salt
4 (1 oz.) squares unsweetened chocolate
1/2 cup butter or margarine
4 eggs, beaten (goodbye, Weight Watchers)
1 teaspoon vanilla extract
1 cup chopped pecans (I skipped this)
Combine sugar, flour and salt in a mixing bowl; mixing well; and set aside.
Melt chocolate and butter in the top of a double boiler. Gradually stir chocolate mixture into flour mixture. (Now, you'd need 4 hands to do this gradually while the pan is dripping from the boiling water underneath. Forget gradually, and stir fast.) Stir in eggs, vanilla and pecans. (or no nuts)
Pour batter into a greased 13X9X2 baking pan. Bake at 325 for 40 - 45 minutes (or the length of a four year old's 'quiet time'). Cool, cut into squares to serve, but good luck getting it out of the pan. This is chocolate fudgey crumble, but it's really moist and tasty.

Thanks to my wonderful husband I actually got to read in bed for a bit before work this morning and I finished it! What a fabulous series, Shannon! I love intelligent girls in YA books, in addition to the exciting plot and hint of romance.
I can't wait for the next one.
