Wedding Breakfast


This is from the Family Gatherings volume of my beloved Southern Heritage Southern Living series. It is from the mansion built by Andrew Jackson for his wife, Rachel. They had a 'Bride's Room' apparently, as many friends of the couple honeymooned there, near Nashville. The cookbook gives a sample Wedding Breakfast:
Fried Country Sausage Patties
Tennessee Turkey Hash
Riced Eggs
Grits Souffle
Apples Special
Hot Biscuits (as opposed to?)
Tea Muffins
Wait! Do you see it - Grits Souffle again!!! I couldn't believe it either. Here are the ingredients in this one. The procedure is similar, though this one cooks at 350 for 45 minutes:
1 cup regular grits, uncooked
4 cups boiling water
1 tablespoon salt
1/2 cup butter or margarine, divided
1/2 cup milk
3 eggs, separated
1/2 tsp. white pepper
1/4 tsp. paprika
1/2 cup (2 ounces) shredded sharp Cheddar cheese
Additional Paprika (?)
I can't figure out which item shown in the Hermitage dining room is the Grits Souffle. They all look a bit suspect...
