Beef and Cheese Spread for Hungry Skaters


The basement is cleaned up again - and cleaned out. We didn't lose much at all, and no cookbooks - yeah! 

Here's the last recipe and scan from the 1959 Teen Time Cooking with Carnation. "When you need 12 sandwiches for hungry skaters..."

Yikes. Why is the dude bringing his skis into the living room, too?

Beef and Cheese Spread
Rinse 2 cups dried beef in strainer under hot water to remove excess salt. (Yum)  Drain thoroughly and chop.  Blend 12 oz. cream cheese with 1/2 cup undiluted Carnation Evaporated Milk, 2 tablespoons finely minced onion and 2 tablespoons chopped parsley.  Stir in dried beef.  Spread on buttered dark bread.

This is like the scary sandwich spread I wrote about a couple days ago for the dinner party. If 12 'hungry skaters' are coming to your house - heat up for call for a pizza!
