Supper on a Bread Slice

It's 5:55 a.m. here. I'm wearing mismatched sweats over a mystery book t-shirt I slept in. My son has been up and down since 5 coughing, and I'm having an asthma moment myself this morning. My 'most attractive and pleasant self'? It would take at least 12 hours to get to the most attractive part (and I'd need to schedule liposuction in there.) , and that certainly wouldn't lead to the pleasant part. I'll settle for clean in a bit here.

Supper on a Bread Slice (Makes plenty for 12 guests) This is suggested when the crowd comes in a hurry before you've had time to plan the 8-course dinner, apparently.
4 12 oz. cans luncheon meat (oh boy - no good recipe starts with that)
2 tablespoons prepared horseradish
1 cup chopped green pepper
2/3 cup (small can) undiluted Carnation Evaporated Milk
2 pounds sliced process-type American cheese (Is there another type?)
2 loaves French bread
Shred luncheon meat (yikes) into large bowl.  Blend with horseradish, green pepper, and Carnation. Cut 8 cheese slices into thin strips, about 1/4 inch wide.  Grate remaining cheese; add to meat mixture.  Blend well.  Split each loaf of bread in half lengthwise.  Place on broiler rack.  Spread cut bread surfaces with meat mixture. Broil 5 minutes 5-6 inches from heat.  Criss-cross cheese strips over top of sandwich.  Continue broiling 3 minutes more (until cheese is bubbly).  Slice and serve at once.

Finished another teen mystery this morning between 5 - 5:30 a.m., but not a traditional one. It was Broken Soup by Jenny Valentine. Her first  Me, the Missing, and the Dead was fabulous, and this one too is filled with subtle clues about family secrets. I really like her books. Both will be included in the reference book I'm writing (too slowly) towards a deadline.

First off what IS canned luncheon meat? Do they still make it other than SPAM? I have many, old cookbooks and there are tons of recipes with canned meat. The whole idea horrifies me..but hey dss it up with a strapless, crinolined evening dress and voila! Love this!! Hope your son is feeling better.
