Butterscotch Pudding Fudge

Weather outside here is frightful... and inside our tempers are getting less delightful... we clearly need some of this:

Butterscotch Pudding Fudge
1 pkg. butterscotch pudding
1/2 c. (packed) brown sugar
1/2 c. evaporated milk
1 c. sugar
1 1/2 c. chopped pecans
1 tbsp. butter
1 tsp. vanilla
Combine first 4 ingredients in a saucepan and bring to a boil.  Cook for 5 minutes, stirring constantly.  Remove from heat and add remaining ingredients.  Beat until cool.  Pour into a buttered dish and cut into squares.

Nice recipe - lots of beating, but no candy thermometer, and only 5 minutes cookies. Sounds great.
