Happy New Year


Today is day 5 of Kwanzaa, or Purpose. The boys and I are going to clean out and bring a lot of things to a charity center. We've been stuck indoors as the older son has had a high fever. It's been a tough month for him.

But I've been looking at New Year recipes. This is from the Southern Living Celebrations cookbook again Here's the menu for New Year's Eve Buffet:
Crabmeat Mold
Danish Meatballs
Cucumber Ring Canapes
Marinated Mushrooms
Fresh Fruit with Assorted Cheeses
Cheese Dates
Shrewsbury Cakes
Hot Rum Punch
Champagne

I've been to a few NYE parties and no one had anything like that - except maybe for the last two items. Tomorrow I'll put up a picture of the vintage item I brought to the family Christmas party. We'll be using it again for NYE...

So this is a photo of the Champagne and the Crabmeat Mold, alone with the Cucumber Rings. I was intrigued by those. It's a lot of work and fuss for no good reason that I can tell...
3 packages cream cheese, softened
2 tablespoons mayonnaise
3 tablespoons freeze-dried chives
1 1/2 tablespoons minced fresh parsley
1/4 tsp. paprika
1 large cucumber, peeled and cored
1 (8-oz) loaf sliced party rye bread
Combine first 5 ingredients; mix well. Place mixture in a pastry bag, and chill.
Cut cucumber into 1/8-inch slices; drain well.
Place one cucumber ring on each slice of bread.  Pipe cream cheese mixture into center of each ring.  Chill.  Yield:  about 2 1/2 dozen.
