Miracle Meringue!



The miracle here is of course that my meringue worked. Those of you who have been reading this a while, know that I've had many a meringue recipe bomb. But check out this Pineapple pie! This is from the Southern Heritage Family Gatherings, from a group of recipes for a family reunion.
Pineapple Pie
1 cup sugar
3 tablespoons all-purpose flour
3 eggs, separated
1 (8 oz. can crushed pineapple, undrained) I guesstimated from a 20 oz can of pineapple chunks. My son ate the rest.
1 tablespoon butter or margarine
1 baked pastry shell I used the Pillsbury ready made crusts and I forgot to bake it. It still tasted delicious but I could see how a firmer crust would have been even better
1/2 teaspoon cream of tartar
1/4 cup plus 2 tablespoons sugar
Combine 1 cup sugar and flour in saucepan; add egg yolks, pineapple and butter, stirring well. Cook over medium heat , stirring until the mixture thickens and comes to a boil. Remove from heat. Cool slightly. Pour filling into pastry shell.
Beat egg whites (at room temp.) and cream of tartar until foamy. Gradually add 1/4 cup plus 2 tablespoons sugar, one tablespoon at a time, beating until stiff peaks form. Spread meringue over pie, spreading to edges to seal.
Bake at 350 for 10 minutes or until meringue is lightly browned (It took 12 minutes for mine.) Cool completely. Serve at room temp. Then I refrigerated it because of all those eggs. Still yummy.
I finished reading Mr. Sebastian and the Negro Magician for my writing class. Interesting book, but I'm not a big fan of stories that leave you wondering what really happened. That's the mystery lover in me. The writing was of course beautiful, though. That class is killing me. Luckily some of my favorite critiquers helped me with this week's chapter to write because I don't believe the teacher, lovely though she is, has liked anything I've done so far.
I have a signing Saturday for Heat of the Moment. If you live in the area, this should be fun because the Palos Heights Fire Dept. is coming also. I really like the folks in this group, too.
