Peanut Butter Fingers


These are so delicious. If I took a picture of the pan now, it would be about empty. Or only a little full, depending on how you look at it.
I had what I thought was a tough day with a sick boy, a crying baby and a big disappointment for a speaking proposal yesterday, and decided to bake. Then I got a call from a friend who's husband has been out of work for a few months, and heard about a colleague who has breast cancer. So I got my head out of, well, a bad place and started putting things in perspective.
This is from Pillsbury's Bake Off Cookie Book, "favorites from 18 years", so while I don't know the date, this one is old as there have been at least 50 bakeoffs...
1 cup flour
1/2 cup sugar
1/2 cup firmly packed brown sugar
1/2 teaspoon soda
1/4 tsp. salt
1/2 cup butter, softened
1/3 cup creamy peanut butter
1 egg
1/2 tsp. vanilla extract
1 cup quick-cooking rolled oats
1 cup semi-sweet chips
Preheat oven to 350.
In large mixer bowl combine all ingredients except chocolate pieces. Press in greased 13X9 pan. Bake for 20 - 25 minutes. Sprinkle immediately with chocolate pieces. Let stand 5 minutes, then spread evenly.
YUM. And really easy.

Oohh! Sounds delectable :) I might have to try making these - although I'll admit that the ham puffs were kinda intriguing ;)

Looks good. You almost got me up and into the kitchen to see if I had the ingredients. Almost. I'm too zapped to bake tonight but maybe this weekend. I'll copy and print out the recipe.
