Sensationally Chewy Brownies


I have a couple in this great little series, from Bristol Publishing, 2000. I wish I could find more. I've been reading that Brownies are the new Cupcakes - that they are the hot new food dessert. This book has 50 variations, including Blondies, my personal favorite.
Here is Sensationally Chewy Brownies:
2 tsp. butter (no one said they are healthy eating)
1 tbs. unsweetened cocoa powder
1 1/4 cups unbleached all-purpose flour
2/3 cup unsweetened cocoa powder
1/4 tsp. baking soda
3/4 tsp. salt
2 cups granulated sugar
2/3 cup vegetable oil
1/4 cup water
1/4 cup whole milk
1 large egg
1 large egg yolk
2 tsp. pure vanilla extract
Heat oven to 350F . Grease an 8-inch square baking pan with 2 tsp. butter. Dust with cocoa powder; invert pan and tap to release excess. (Never heard this tip before, but if it involves a form of chocolate, I'm in.)
Sift flour, 2/3 cup cocoa powder, baking soda, salt and sugar into a large bowl. Add oil, water, milk, egg, egg yolk and vanilla extract. Stir vigorously with a fork until mixture is well blended. Spread batter evenly in pan.
Bake in center of oven for 25 - 35 minutes or until a toothpick inserted in the center comes out clean, with a few moist crumbs, but not wet batter. Cool thoroughly in pan on a wire rack, about 1 hour.
Cut into 16 (2 inch) square bares and remove from pan. Makes 16.
I am home with two sick boys today. Yes, one of us has been sick each week here lately. The house is clean, though, as we start showing it next week. Perhaps we will make these to cheer ourselves up today.

I have a splendid and super easy recipe for brownies to die for that all my high school kids love: It works for any package of brownies for the 13 x 9 pan size; prepare as directed on the box; put half of the batter in the pan, place 3 large candy bars (Hershey’s Special Dark or Symphony – whatever you like, I use the milk chocolate), then pour the rest of the batter on top; bake as directions say. They are amazing. You can dress them up by baking in a tart pan or by putting half the batter down, then the chocolate bars, then pour on some caramel sauce, then the other half of the brownie mix. MMMMMMM. I hope all is well with you. I've been enjoying your blog for a while now. CD

CD - Welcome! What a lovely recipe. Of course I do have candy bars in stock here, the Special Dark and the regular Hershey's to make emergency bad day s'mores. I must try this. Thank you for the fabulous and delicious idea!

Brownies are not the new anything as they have always rocked! So many things like cupcakes go in and out of fashion but brownies have always been delicious and will be around forever!
