Fried Apple Balls


That's actually not an apple ball. Well, it's an 'apple ball' image I found on Yahoo, but it's a stress squeezee thing in the shape of an apple. I needed an image...
I'm still reading through the Bohemian-American Cook Book and had no stomach this morning to blog about puffed prune pudding or stuffed fried eggs or head cheese. My friend Tom who gave me this cookbook has been wanting me to write about Jiternice, which apparently has chunks of pigs head. His father loved it. I'm not sure there will ever be a time when I'm up for blogging about that.
This one is a bit weird but still sounds yummy. Anyone had anything like this before?
Fried Apple Balls
Peel and cut tart apples into dice, enough to fill a plate. Mix with an equal amount of cracker or bread crumbs, the grated rind of two lemons, four tablespoons of sugar and a dash of cinnamon. Finally fold in carefully four whites beaten stiff. Form small balls, the size of a very small apple, dip in bread crumbs and fry in hot fat. Boil one quart of diluted fruit juice with half a cup of sugar, a bit of lemon rind and a piece of whole cinnamon. Place the fried balls in this for two to three moments, drain, arrange on a plate and sprinkle with powdered sugar.
It is amazing to me that the imposing looking woman pictured in the book (see about three blogs ago) designed all these recipes. There are three for Milk Toast on the same page. She looks like she is meat and potatoes all the way, or at least head cheese. But then there are these creative pastry/dessert dishes.
I won't be eating these desserts for a bit, though. At least, not a lot of them. A couple months of steroids where I was hungry all the time have resulted in a need to return to Weight Watchers. I did their online program 6 years ago and lost 30 pounds. I've used it to lose 8 - 10 when they creep up here and there too, and I rejoined yesterday to lose the steroid addition. There are so many good recipes on their site, too - even desserts! I have to fit in my suits again for Bouchercon in October, a huge mystery conference where I am speaking.
Not much reading in the past few days. Josh started at his new school yesterday. I very much like his teacher and the school so far. They have an enormous school library - that has to be a good sign, right?
