Jellyroll Meatloaf


OK, it's really called Pinwheel Meatloaf, but really it's like a Jellyroll.
1 pound hamburger
1/4 lb. ground pork
1 egg, beaten
1/4 cup water
1 tsp. salt (oh boy)
1/8 tsp. pepper
Mix meat, egg, water and seasoning. Pat out into a square 1/2 inch thick on a piece of waxed paper. Spread with stuffing, roll up as for jelly roll. (See, I told you!) Place on a greased baking pan. Bake in a moderate oven (350 F) for about 1 hour.
Stuffing:
3 cups soft bread crumbs
2 tablespoons chopped onion
1/4 cup diced celery
2 tablespoons chopped parsley
1/2 tsp. salt
1/2 tsp. sage or poultry seasoning (??)
2 tablespoons melted butter
1/3 cup water
Combine ingredients, mix lightly with a fork. Spread on meat mixture.
Serving suggestions: Remove to a platter. Arrange broiled onion halves around loaf. Garnish top of loaf with whole or slices of stuffed olives. Garnish platter with celery leaves or parsley. Serve with brown gravy or tomato sauce to which chopped ripe olives have been added.

Really, there is a weird one on every page here. This one is just so gross - how would that ever get cooked through? Why not just serve the stuffing separately?
