These recipes don't have photos, so I pulled this from a Yahoo image search. I'm looking at my Farm Journal 1959 Country Cookbook this morning. It's definitely among my favorites, though the odd recipe does crop up in there every so often.
For example: September Apple Salad
2 c. diced unpeeled apples
2 c. diced peeled cucumbers (Yes, cucumbers!)
1/2 tsp. salt
1/4 c. lemon juice
1/2 c. salad dressing
1/4 c. chopped nuts (any kind?)
Lettuce
Toss apples and cucumbers with salt; sprinkle with lemon juice. Mix in salad dressing and nuts. Serve chilled on lettuce. Makes 6 servings. It's listed as a '5-star recipe'. At least it doesn't have prunes. The index tells me there are 8 prune recipes in this book.
But then there's Virginia Apple Pudding, a nice basic yummy recipe:
1/2 c. butter or margarine
1 c. sugar
1 c. sugar
1 c. sifted flour
2 tsp. baking powder
1/4 tsp. salt
1/4 tsp. cinnamon
1 c. milk
2 c. cooked or canned apple slices
Melt butter in 2 qt. casserole.
Combine next 6 ingredients to make batter; pour on batter. Drain apples; pile in center of batter.
Bake in moderate oven (375F) until batter covers fruit and crust browns, 30 - 40 minutes. Makes 4 - 6 servings.
I'm reading two books by Sandra Byrd - Let Them Eat Cake, then Bon Appetit. Christian Cooking novels - these are wonderful feel good fun. I'm also at loose ends after a big deadline this week. I have a list of things to do, I just can't seem to get to it. What tasks are you avoiding this weekend?

Thanks for the recipe. Their is a different if I use butter or margarine?
I have not yet tried this one, but I believe it's ok with butter or margarine.
