Chicken Shortcake for Christmas Dinner


Have you planned your holiday menus yet? This is from my Southern Heritage Southern Living beloved series - the Celebrations volume. It is a South Carolina 1839 Yuletide Supper. Here is the menu:

Cream of Pea Soup, Celery
Scalloped Oysters
Chicken Shortcake
Poinsettia Salad
Stuffed Celery Roll
Scotch Hermits
Whiskey Kisses

MMMmmm. At least it uses more vegetables than most vintage holiday menus. Notice the Chicken Shortcake is cut in stars. Very cute. Did they have star cutters in 1839? Perhaps they just used their knives and a pattern.

Never fear, the Poinsettia salad is not actually the poisonous flour. Here is the recipe for that: 6 tomatoes, 2 packages cream cheese, ¼ tsp. salt, ½ tsp. paprika, Martinique Dressing, Lettuce leaves. The dressing is parsley and green pepper with olive oil/vinegar. The Whiskey Kisses use ¼ cup bourbon!

I'd have to add Pepto Bismol to this menu...

Whiskey kisses? 1/2c bourbon! Now that's festive. Pea Soup. I love pea soup.
Any chance you could share the recipes?
I loved the recipe for the bread pudding. Well, I will when I make it. There goes the diet!!!
