Valentine Party


When is the last time you were invited to a Valentine's Party? (and kids or school parties don't count) I know - me neither! I'd like to go to this one, though, from the Foodarama 1959 Party Book. The menu is:
Claret Punch
Mile High Raspberry Pie
Nuts
Mints
Coffee
The talk at the Schaumburg Twp. Library went really well last night. The people were fun, the food went over well, and some even laughed at my jokes - when they were supposed to! I have another Saturday.
Here's Mile High Raspberry Pie
2 pkg. frozen raspberries (10 oz. each)
2 envelopes unflavored gelatin
1/2 cup sugar
1/2 cup water
4 egg whites, stiffly beaten
2 cups heavy cream, whipped
1 baked 9-inch pie shell
Shredded Coconut
Thaw raspberries; drain juice into a measuring cup; add cold water if necessary, to make 1 cup raspberry juice. Soften gelatin in the raspberry juice. Combine sugar and water; stir over low heat until sugar dissolves. Cook rapidly to 235F on candy thermometer, or until syrup spins a thread. Add softened gelatin to syrup; stir to dissolve. Slowly pour syrup mixture over egg whites, while beating rapidly. Continue beating until mixture forms peaks when beater is raised. Fold in cream. Fold in drained raspberries. Spoon into pie shell. Garnish with shredded coconut. Chill several hours, or until set.

Oh how disappointing, I was looking forward to the Claret Punch! No,not really, what is that weird thing in the punch bowl? The Mile high pie looks almost normal but I don't fancy coconut with my raspberries, thanks all the same.
