Grasshopper Pie


This cool treat appears in lots of vintage cookbooks. I just had no idea how prevalent the alcohol is in it... From Betty Crocker’s Pie and pastry Cookbook, c1968:


Chocolate Cookie Crust
32 large marshmallows
½ cup milk

¼ cup crème de menthe
3 tablespoons white crème de cacao
1 ½ cups chilled whipping cream
Few drops green food coloring, if desired

When I saw a variation I thought - ok, probably a non-alcoholic version. Not so much:
Variation: Alexander Pie – substitute ¼ cup dark crème de cacao for crème de menthe and 3 tablespoons brandy for crème de cacao.

This was really big in the 60's according to my sources. Anyone had this one before or made it?

The Pie Party at Niles PLD was lots of fun.  Many folks liked my 1960's green double knit polyester dress, too. Maybe I'll post a picture of that someday here...

My mother was not a baker and I guess this was easy enough for her to manage. She made them all the time.
