Quick Peanut Butter Bars

It is my Dad's Birthday today - I've mentioned that he loves Peanut Butter. He also loves Pie - last night I did a Pie Party at the Brookfield Public Library and served:  Vanilla Moon Pies, Apple Pie Jelly Bellys, Apple Pie, Lemon Tarts and mini Coconut Pies. He was thrilled - he and my Mom came, along with my sister and niece. I also had a full crowd there - and they were so much fun. A few like mincemeat (just like Molly MacRae) and teased me when I kept mentioning how I don't like it (along with prunes!). I had a great time.

So for Dad's theme - here is Quick Peanut Butter Bars from Seasoned With Love, a Wood Dale Community Church cookbook. (I have a ton of church cookbooks - and rarely blog from them - that could fill an entire separate blog!)

2 c. oatmeal
1 c. peanut butter
1 c. dry milk (??)
2 1/2 c. powdered sugar
1 c. margarine
1 c. sugar
1/4 c. milk
2 T butter
1 pkg. chocolate chips
Mix together oatmeal, peanut butter, dry milk, powdered sugar and margarine.  Press into bottom of a jellyroll pan.  Do not bake! Cook 1 cup sugar, 1/4 cup milk, and 2 tablespoons butter to a full rolling boil.  Add 1 package chocolate chips and blend quickly until melted.  Spread over peanut butter mixture.  Cool. Cut into bars.

Yum.
Who doesn't like chocolate and peanut butter?

Happy Birthday to your Dad. He's lucky to have a wonderful daughter like you who cooks all of his favorite things!

I can't remember if I mentioned this before but I collect vintage cookbooks too. I've got tons. I'm absolutely fascinated with paging through them, but my fascination doesn't carry over into the kitchen. I never (or rarely) cook/bake any of the recipes, which is pretty crazy.

So I'm going to keep coming back to your blog and hope that eventually I get inspired to start cooking again! Thanks for your wonderful blog. :-)

Oh dear.. This made my ticker run wild! First, what a nice thing to do for your father - it sounded so delicious! Second. I already own about 30 cookbooks from the 80 and 90ths.. I haven't even thought about all the historical treasures! Haha. A new world is opening before me.. Thanks for sharing!
