The Tabletop It! cookbook provides lots of butter recipes to go with the Peachy Keen Pancakes I last wrote about. Some of these sound heavenly!
Hot Spicy Apple Butter
1/2 cup Land O Lakes Sweet Cream Butter
1 1-pound 5-oz. can apple pie filling
1 cup orange juice
3 tablespoons brown sugar
1 tsp. cinnamon
Dash nutmeg
In 1 1/2 quart saucepan combine all ingredients. Bring to a boil. Serve over pancakes or waffles. makes about 3 1/2 cups.
Maple Butter
1/2 cup Land O Lakes Sweet Cream Butter, softened
1 tablespoons maple flavored syrup
In small mixer bowl cream butter until light and fluffy. Beat in syrup. Makes about 1/2 cup.
Creamy Honey Butter
1/3 cup Land O Lakes Sweet Cream Butter, softened
1 3-oz. package cream cheese, softened
1/4 cup honey
1 tablespoon confectioners' sugar
1/4 tsp. cinnamon
In small mixer bowl cream butter and cream cheese until light and fluffy. Beat in honey, sugar and cinnamon. Makes about 2/3 cup.
Old Fashioned Brown Sugar Syrup
1/4 cup Land O Lakes Sweet Cream Butter
2 cups firmly packed brown sugar
1 cup water
1/4 tsp. cinnamon
Melt butter in West Bend Electric Fondue Pot (???) at MEAT setting. (oh boy) Stir in sugar, water and cinnamon. Bring to a boil, stirring constantly. Cook gently for 5 minutes. Reduce to CHEESE setting for serving Makes 2 cups.
I have to see one of those fondue pots!
I had a Pie Party at the Geneva Public Library on Sunday and will head to the Franklin Park PL tonight after work for another one. Then, beginning Thursday, I switch shows for Nostalgia Foods at the Lockport Branch of the Des Plaines Valley Public Library District. Plus I have some teen programs this week - crazy!
