Peachy Keen Pancakes

This is still from the Tabletop It! Cookbook and is perfect for a fall weekend morning.

Peachy Keen Pancakes
2 cups buttermilk biscuit mix
1 tsp. cinnamon
2 eggs, beaten
1 6-oz. carton peach-flavored yogurt
1 17-oz. can sliced peaches, drained and finely chopped

In large mixer bowl combine biscuit mix, cinnamon, eggs and yogurt.  Beat until smooth.  Stir in peaches.  (Batter will be thick.) 
Preheat West Bend Electric Buffet Skillet or Griddle at 350 degrees. Pour batter into skillet using about 1/3 cup per pancake. Spread batter to 1/4 inch thickness. Bake until bubbles break and edges are cooked.  Turn and bake on other side.  Makes 12 - 15 pancakes.

I can't believe today is the 9th anniversary of the life-changing 9/11. It is hard to remember life before, and the NY skyline still looks like something is missing. I've been on 10 flights this year alone and I still think about it every time I get on a plane. As always today I'm saying special prayers for the thousands of families who lost members on that terrible day.
