Pecan Pie

This post is about two handwritten recipes for Pecan Pie, from a box of handwritten recipes I bought over the weekend. My friend Susan Miura makes a fabulous one, and this is one of her favorites. I thought she - and you - would enjoy these variations.

Pecan Pie
1 C white syrup
1 C Dark Brown Sugar
1/3 C melted butter
1 heaping cup pecans
3 whole eggs
Vanilla
Salt
9 in. pie shell 45 - 50 minutes.
That's it - no amounts for vanilla or salt, no temperature...

Pecan Pie      Hazel O'Flarety
1 C. light or dark Syrup
1 tsp. vanilla
3 eggs (don't beat)
1/2 c. sugar
2 tbsp. melted butter
1 c. chopped dates
1/4 tsp. salt
1 c. chopped pecans
Combine all ingredients. Put in baked shell. Bake at 420F for 10 minutes; 350F for 45 - 50 minutes longer.

Hazel's version at least gives us a bit more info.
Do you have a favorite version?

Tomorrow is December 1, and I'll switch from handwritten recipes as a theme to cookies and candy for the holidays.

In other news, I'm back on Weight Watchers...
