Pink Surprise Salad

Someone went to the trouble of typing this one on a card for the recipe box. My surprise was the disgusting combination of ingredients! A title of Pink Surprise Salad conjures a delicious raspberry Jello/sour cream type delight - but not this!

3 hard boiled eggs, chopped
2 C. cottage cheese
1 small onion, fine
1/2 C. salad dressing (any kind apparently)
1/4 C. catsup
1/2 tsp. salt
Combine eggs, cheese and onion.  Mix salad dressing catsup and salt and add to mixture.  Chill, serve on lettuce.

Wow. I've seen hard boiled eggs to be dyed pink for a 4th of July picnic in a couple vintage cookbooks, but with catsup? Help.

Hi, Amy...just discovered you through a Google search! I was expecting some kind of raspberry Jello thingie, too...I think by salad dressing, they mean Miracle Whip...at least, that's what we call salad dressing in the South.
