Coconut Almond Logs

This is from the 1976 "The Cookie Jar" from the Culinary Arts Institute. The Coconut Almond Logs on the glass plate there. This looks pretty easy, too. Yum!

1 package (8 oz.) cream cheese
1/2 tsp. vanilla extract
3 cups sifted confectioners' sugar
2 cups uncooked quick-cooking rolled oats
1/2 cup flaked coconut
1/2 cup silvered blanched almonds, chopped
1 cup flaked coconut, toasted (To toast coconut, spread coconut in a shallow pan and put into a 350F oven for 5 to 10 minutes, or until lightly toasted; stir several times.

Beat cream cheese with vanilla extract until creamy.  Add confectioners' sugar gradually, beating until blended.  Stir in oats, 1/2 cup coconut, and almonds.  Shape mixture into 2-inch logs.  Roll logs in toasted coconut to coat.  Chill until firm.  Store in refrigerator.
About 3 dozen.

Lately I've been reading only for the Margaret Edwards Award ccommittee. We'll be announcing our winner in early January at the ALA Conference in San Diego. But last night at the library many folks were coming in asking for good books as their vacation these weeks is the only time they've had to read for pleasure all year. I had lots of fun showing them my favorite books.
