Double-Quick Cookie Squares


Here is the cover of The Cookie Jar, a 1976 Culinary Art Institute title. I think we are all at the point in the holidays when we need to take care of things quickly. So this recipe appealed to me today.

Double-Quick Cookie Squares
30 square graham crackers
6 oz. semisweet chocolate pieces
1/2 cup grated coconut
1 can (14 oz.) sweetened condensed milk
1/2 cup chopped pecans

Crumble graham crackers into a bowl.  Add chocolate pieces, coconut, and condensed milk; blend to moisten crackers. Turn into a lightly greased 9x9x2 inch baking pan.  Top with pecans. Bake at 325 F 30 minutes. Cookies are moist and brown only slightly.  Cool in pan on wire rack. Cut into squares. 3 dozen cookies (Um, math is not my specialty, but cutting a 9x9x2 into 36 pieces? oh boy.

Man, it is getting down to crunch time as far as holiday baking goes, and I'm thankful for these recipes to look through in my last minute recipe selection!

Cut 5 times each side at 1.5" intervals will yield 36 from a 9x9... Your loving husband.
