Deep-Dish Salmon-Cheese Pie

There are many gems in this book, as I've said. I found a fish-pastry recipe that may satisfy my friend Joe. Readers will remember my quest for this type of recipe for him from this spring. He swears it's tasty. Oh boy.
1 tbsp. chopped onion
2 tbsp. butter or other fat (What would that be?)
1/4 cup Bisquick
1 1/2 cups milk
1 cup grated sharp Cheddar cheese
1 lb. can salmon, drained and broken into large pieces
1 tsp. salt
few grains pepper (??)
Heat oven to 450 (hot) (Thanks for the tip.). Saute onion in butter. Remove from heat. Blend in Bisquick. Slowly stir in milk. Bring to boil over low heat, stirring constantly. Boil 1 min. Stir in rest of ingredients. Turn hot mixture into greased 1 1/2 qt. baking dish and heat in oven until mixture bubbles. Make 1/2 Biscuit dough. Pat or roll out to fit top of baking dish. Place on hot mixture. Cut 2 or 3 silts in center. Bake about 15 min. or until topping is brown.
Add 2/3 cup milk all at once to 2 cups Bisquick. Stir with fork into a soft dough. Beat dough vigorously 20 strokes, until stiff and slightly sticky. Roll dough around on cloth-covered board lightly dusted with Bisquick to prevent sticking. Knead gently 8 - 10 times to smooth up dough. Roll 1/2" thick. Biscuits double in size in baking. Dip cutter in Bisquick. Cut close together to save rerolling.
Bake on ungreased shiny (as opposed to?) baking sheet 10 - 15 min @ 450; close together for soft sides, 1" apart for crusty sides. (??)
Last night was one of those times I'm so happy to be a teen librarian. We painted a bench for an auction in one of the towns the library serves. It has a rainbow on one side, characters on the other, and we got it all done in 2 hours. This bench was large enough to comfortably seat 5 people across. We had a lot of fun, and I'm sore but still tired this morning. Still happy, too, though!
