Spam Cakes


And this one is from 1996 - not even vintage! The lovely Laura from the Bloomingdale Public Library gave me some donated cookbooks last night when I did a show there. I did my Preserving Family Recipes, and that crowd was great fun. Tonight I have that same show at the Schaumburg Twp. Dist. Library.  One of the donated cookbooks was Great Tasting Recipes with Spam.

Here's SPAM Cakes!
1 1/2 cups pancake mix
1 cup milk
1 egg
1 tablespoon vegetable oil
1 (7 oz.) can SPAM luncheon meat, finely chopped (oh boy)
Syrup or honey
In large bowl, combine pancake mix, milk, egg and oil. Stir in SPAM.  Using 1/2 cup for each pancake, pour batter onto greased griddle; cook until browned on bottom. Turn and cook until browned.  Serve with syrup and honey.

Scary.

I'm not going to lie and say I wouldn't eat this...I remember having Spam dipped in egg, pan-fried, with a bowl of white rice for breakfast quite often as a kid. I've got a special place in my heart for Spam; I just can't think about how it is produced...or what it actually is for that matter...

Hilarious photo. It looks like they used some kind of rubber maple syrup prop. Maple syrup never pours that perfectly!
