I'm having scanner/Blogger issues today, but this is a handwritten recipe, from the back of that investment banking statement: Sea Breeze Salad. I've seen many versions of this in church and Jello cookbooks, but it does look good.
3 3oz. pk. lemon or lime or comb.
2 C. boiling H2O
2 C. cold liquid - juice from drained pineapple and H2O
1 pkg. lemon pudding, regular (as opposed to?)
1 C. crushed pineapple, drained
1 env. whipped topping
Dissolve gelatin in H2O. Add cold, set till thickens. Stir in pudding prepared as directed. Whip with mixer - Reserve 1 C. of mixture. To remainder add pineapple. Pour into 13x9 pan. Whip topping mix as directed fold into reserved mixture. Spread over 1st layer - 10 - 12.
That's typed exactly as written. My niece Holly is watching me put this in. We're enjoying this woman's shortcuts in writing and her H2O references. Sounds fairly tasty, though. As opposed to the Pink Surprise from last week, that is.

I think the "regular" pudding is as opposed to "no-cook" or "instant" pudding. That is what I take it to be, anyway.
