Santa Lucia Day: Swedish Wedding Cookies?

Anyone get up early this morning to serve coffee and buns to their family members? Did you all break Pepperakrakor into three equal parts in your hand for good luck? I have a lot of fun with folks doing that at my shows, trying to see how many can do it.

I found some 'Swedish' recipes in my Southern Living Cookies and Candy Book, but I don't know how accurate they are. I've never heard of Swedish Wedding Cookies. I do like Mexican Wedding Cookies, part of the Las Posadas Celebration, and I'm not sure what makes this version Swedish, but they do sound good:

1/4 lb. butter (oh boy)
2/3 c. sugar
1 egg, slightly beaten
Pinch of salt
1 c. chopped dates
 1 tsp. vanilla
2 c. oven-toasted rice cereal
3/4 c. chopped walnuts
1 c. flaked coconut
Combine the butter, sugar, egg, salt and dates in a saucepan and cook for 7 - 10 minutes or until thick.  Remove from heat.  Add the vanilla, cereal and walnuts and blend well.  Form into small balls and roll in coconut.  Chill.

That is a lot of butter, but darn that sounds good!
