I enjoy cooking and baking but especially like to prepare quick and easy foods. This is mainly because I spend most of my time either in front of a computer writing in a variety of genres or reading mystery and romance fiction. Today I'm including one of my fast recipes that company can enjoy. In honor of Molly’s new mystery novel, it’s a hot recipe--though not as hot as my sensual historical romance TEA LEAVES AND TAROT CARDS.
Easy Guacamole Dip
Avocado dips are easy to make and can be varied for every taste. The avocado is a very healthy, heart-smart food. Guacamole is also traditional for Super Bowl Sunday. So here’s my lazy cook’s recipe for it:
Make certain your avocado(s) are fully ripened. They should be dark green and a bit soft to the touch but not mushy. Cut in halves with a sharp knife so the two halves separate easily.
Pull out the pit, then scoop all the green fruit with a spoon and place in a bowl.
For two people, one avocado is sufficient for a dip. For four people, two avocados, and so on.
Next, mash your avocado(s) with a fork until fairly smooth.
Add half a jar of salsa (12 to 16 oz.) and mix together. Use the whole jar for two or more avocados. If you really want a hot, spicy dip, choose extra spicy salsa.
Squeeze in half a lime for zing.
Season with a teaspoon of cilantro ( I don’t bother using the fresh kind. I keep jars of seasonings on hand).
Serve with favorite chips or crackers.
